Gosh, time is flying by! I hope you had a joyful Thanksgiving. For those of us with special dietary needs, the holidays can often be a bit of a challenge especially when you consider that we gather at the table with a dead animal as the centerpiece. Whether your a vegetarian, vegan, raw foodist, gluten-free or just plain watching what you eat, there will be challenges when gathering for celebrations.

For me, preparing or bringing my own meals, with enough to share, has really helped take the focus away from what I can't eat and enjoy a meal that I know is free of the things I choose to not partake. Being that my diet is all vegan, gluten-free and currently about 75% raw, salad is an obvious and easy choice. But given that I'm completely addicted to Thai, salad rolls have become my staple. I love, love, love them! Fresh vegetables wrapped in a soft rice paper wrapper served with peanut sauce. Heaven.


Rice paper wrappers can be purchased at Safeway and Fred Meyer. My basic version includes leaf lettuce (I prefer red leaf lettuce), red bell pepper, carrot, mung bean sprouts, diced green onion and cilantro. Often I will include diced, fried tofu or bean thread noodles. Serve with peanut sauce. Yum!
